Mom’s Kiwifruit Cake

1 cup cooking oil
1 cup kiwi pulp
1 cup mayonnaise
2 cups sugar
4 large eggs
3 cups flour
2 teaspoons baking soda
1 package (3 1/2 oz.) vanilla instant pudding
1 cup chopped nuts
In a large bowl, beat sugar, oil and eggs until smooth. Add mayonnaise and kiwi pulp. Mix well. Add nuts.

Sift flour, soda, salt and pudding together. Add to mixture. Beat about three minutes with mixer at maximum speed.

Pour into a greased bunt pan and bake for 1 hour or until cake springs back when touched with finger.

Cool on rack and sprinkle with powdered sugar.
